Ingredients
  

  • 1 ½ lbs boneless,skinless chicken thighs or breasts
  • ½ cup sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 1 tablespoonvegetable oil (for cooking)
  • 1 green onion,thinly sliced (for garnish)
  • 1 teaspoon sesameseeds (optional, for garnish)

Instructions
 

  • Prep the chicken: Cut chicken into bite-sized chunks and pat them dry. This helps get a better sear in the pan.
  • Mix the sauce: In a bowl, whisk togethersweet chili sauce, soy sauce, rice vinegar, honey, garlic, and ginger. Set aside
  • Sear the chicken: In a large skillet over medium-high heat, heat the vegetable oil. Add the chicken and cook for about 5–6 minutes until golden and cooked through.
  • Add the sauce: Pour the sauce into the pan and toss to coat all the pieces.
  • Thicken it up: Mix cornstarch with water to create a slurry, then stir it into the sauce. Cook for 2–3 minutes until thick and glossy.
  • Finish and serve: Remove from heat, sprinkle with green onions and sesame seeds. Serve hot over rice, noodles, or lettuce wraps.
