Ingredients
  

  • 1 cup (240g) sourdough discard
  • 2 large ripe bananas, mashed
  • ½ cup(100g) granulated sugar
  • ¼ cup (50g) brown sugar
  • ½ cup(120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (120ml) milk
  • ½ cup (90g) chocolate chips or chopped nuts (optional)

Instructions
 

  • Step 1: Preheat and Prepare
    Preheatyour oven to 350°F (175°C). Line a12-cup muffin tin with paperliners or lightly grease the wells to prevent sticking.

  • Step 2: Mash and Mix Wet Ingredients
    Ina large mixing bowl, mash the ripe bananasuntil smooth. Add the sourdough discard,granulated sugar, brown sugar, oil, eggs, and vanilla extract. Whiskuntil fully combined and smooth.
  • Step 3: Combine Dry Ingredients
    Ina separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. This ensures even distribution of the leavening agents and spices.
