1 cup All Purpose Flour (or Whole Wheat Flour, Cake Flour, Pastry Flour, Self-Rising Flour)
8 ounces Greek Yogurt (Plain or Vanilla work best)
2 teaspoons Baking Powder (Not needed if using Self-Rising Flour)
¼ teaspoon Salt (Not needed if using Self-Rising Flour)
2 tablespoons Butter (or Coconut Oil, Nut Butter also works!)
¼ cup Brown Sugar Substitute (or sweetener of your choice)
Generous amount of Ground Cinnamon
For the Frosting:
6 ounces Cream Cheese (Fat-Free, Reduced Fat, or Full Fat work well)
1 ½ scoops Protein Powder (Vanilla flavor is recommended)
1 teaspoon Vanilla Extract
2ounces Greek Yogurt (Cinnamon or Vanilla flavors work best)
Sweetener (Optional, depending on the sweetness of your protein powder)
Instructions
Preheat the OvenPreheat your oven to 350°F (175°C). If you're using a baking pan, lightlygrease it with butter or oil.
Prepare the Dough In a large mixing bowl, combine the 1 cup of flour, bakingpowder, and salt (if not using self-rising flour).Stir them together to mix evenly. Add the Greek yogurt, butter(or coconut oil), and brown sugar substitute to the dryingredients. Use a spoon or your hands to combine until a dough forms.
Roll Out the DoughOn a lightly floured surface, roll out the dough into a rectangle shape, about 1/4 inch thick. Make sure the dough is evenly spread out
Add Cinnamon FillingGenerously sprinkle the ground cinnamon over the rolled-outdough, covering the entire surface. You can also add a little more brown sugarsubstitute if you like extra sweetness.
Roll and SliceCarefully roll the dough up from one edge, making sure it’s tight but notoverly pressed. Once rolled, slice the dough into about 8-10 even pieces,depending on how large you want your rolls.
BakePlace the sliced rolls into your prepared baking pan, leaving a little spacebetween them. Bake for 18-22 minutes or until golden and cooked through. Checkby inserting a toothpick in the center – if it comes out clean, the rolls areready
Prepare the FrostingWhile the rolls are baking, make the frosting. In a medium bowl, beat togetherthe cream cheese, protein powder, Greekyogurt, and vanilla extract. If your protein powderisn’t sweet enough, you can add a little extra sweetener to taste. Whiskuntil smooth and creamy.
Frost the RollsOnce the cinnamon rolls are out of the oven and slightly cooled, spread thefrosting generously over the top of each roll. The warmth from the rolls willmelt the frosting, making it extra delicious.
