Prepare the soba noodles:Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions (usually around 4-5 minutes). Once cooked, drain and rinse the noodles under cold water to stop the cooking process. Set them aside.
Season the salmon:Pat the salmon fillets dry with a paper towel to ensure the skin crisps up in the air fryer. Drizzle the salmon with olive oil, then season both sides with salt and pepper. Prepare the soba noodle sauce:While the salmon is cooking, prepare a quick sauce for the soba noodles. In a small bowl, combine soy sauce, a drizzle of honey, and a splash of lemon juice. Stir well.
Toss the soba noodles:Add the cooked soba noodles to a bowl and pour thesauce over them. Toss until the noodles are evenly coated. You can also add adrizzle of sesame oil if you prefer a richer flavor
Assemble the dish: Divide the soba noodles between two plates. Place a crispy salmon fillet on top of each serving of noodles. Garnish with toasted sesame seeds and chopped green onions.
