Ingredients
  

  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 12 egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Cooking oil (for frying) or spray (for baking)

Instructions
 

  • In a large bowl, combine shredded chicken, buffalo sauce, cream cheese, and mozzarella cheese. Mix until smooth and well combined. If desired, fold in chopped green onions or crumbled blue cheese for extra flavor.

  • Begin by folding the bottom edge over the filling. Fold in the left and right sides, then roll the wrapper tightly up toward the top. Brush the seam with beaten egg to hold it closed.
  • Repeat the process with remaining wrappers and filling.
  • To fry: Heat oil in a large skillet over medium heat. Fry rolls in batches for 2-3 minutes per side, until golden and crisp. Drain on paper towels.
