Ingredients
  

  • 1 pound ground chicken
  • 1 small yellow onion, grated or finely chopped
  • ½ teaspoon chopped garlic
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup all-purpose flour (or 1:1 gluten-free flour, such as King Arthur brand)
  • ¼ cup olive oil

For the Mushroom-Onion Gravy:

  • 2 cups sliced mushrooms
  • 1 large yellow onion, sliced
  • 2 tablespoons butter (or ghee or dairy-free butter)
  • 2 tablespoons all-purpose flour (or 1:1 gluten-free flour)
  • 2 cups chicken or vegetable stock
  • Salt & pepper to taste

Instructions
 

  • Mix the Chicken Patties – Combine ground chicken, grated onion, garlic, parsley, garlic powder, salt, and pepper in a bowl. Form into oblong patties.

  • Dredge and Sear – Coat patties lightly in flour. Heat olive oilin a skillet and cook patties for 4-5minutes per side until golden brown. Remove and keep warm
  • Sauté Onions & Mushrooms – In the same skillet, cook sliced onions and mushrooms until softened and caramelized. Remove and spoon over the steaks.
  • Make the Gravy – Melt butter in the skillet, whisk in flour, and cook for 1 minute. Slowly add chicken or vegetable stock, whisking constantly until thickened. Season with salt & peppe
  • Serve & Enjoy – Pour the gravy over the chicken steaks and serve with mashed potatoes, rice, or roasted vegetables.
