Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • ¼ cup honey or maple syrup (adjust based on sweetness preference)
  • ½ cup water or coconut water
  • 1 tablespoon lemon juice (for a hint of tartness)
  • ½ teaspoon vanilla extract (optional, but enhances the flavor)

Instructions

  • Blend the Ingredients In a blender, combine the strawberries, honey (or maple syrup), water, lemon juice, and vanilla extract. Blend until smooth. If you prefer a chunkier texture, pulse a few times instead of blending completely.
  • Strain for a Smooth Consistency (Optional) If you want a perfectly smooth popsicle, pour the mixture through a fine mesh sieve to remove the strawberry seeds. This step is optional but recommended for a silkier texture.
  • Fill the Popsicle Molds Pour the blended mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze. Insert the popsicle sticks
  • Freeze Until Solid Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely firm.
  • Unmold and Enjoy To easily remove the popsicles, run warm water over the outside of the mold for a few seconds. Gently pull out the popsicles and enjoy your refreshing treat!
